Hard Cider

When we bought our home two years ago, we were surprised to find an apple tree in the yard, of the variety Beverly Hills. Really, what a perfect name for fruit that is only kinda edible. Since the kids didn’t want to eat the apples, I got the bright idea to turn them into hard cider, thereby fulfilling my long-term dream of fermenting something on purpose.

The process isn’t hard – basically you need about $3 in special equipment – but it is time consuming. For starters, it takes a heck of a lot of apples to make a gallon of cider. After juicing every apple on the tree, I still only had about 3/4 gallon. Also? if you don’t totally know what you are doing, you might find yourself staring at your brew wondering whether or not it is even fermenting, then googling like mad, then staring again. In other words, it can be a bit anxiety producing the first go.

I was not sure the yeast was sufficient, so I proofed a bit more and added it in. In two weeks or so, we should know whether or not it has worked, and then we’ll let it sit for a few more weeks before drinking. I’ll keep you posted!
