Less Guilt, More Spinach Spinach Dip

Hi internets! Sorry for the long absence. I was really busy with this thing (i.e. my job), and let’s just leave it that sold-out shows in a brand-new venue were a wee bit stressful. Between working late and sleeping, there was little time for posting here.

So I’ve been meaning to post this for a while, because I made it ages ago, and LOVED it, and it’s just about to be summer veggies and dip season for which this is the perfect accompaniment. Fat-free greek yogurt turns an otherwise guilt-inducing treat into an everyday healthy food.

  • 3 – 4 oz spinach, cleaned and stemmed
  • 1/2 medium onion, cut into fine dice
  • 2 Tbs light mayo
  • 6 oz fat free Greek style yogurt
  • Salt and pepper

In a saute pan, cook the onion with a swirl of EVOO until the onion is lightly brown and carmelized. Set aside. In the same pan, add the spinach, 1/4 C water, and boil the spinach until the water has evaporated and the spinach is very tender.

Remove the spinach from the pan and let cool. Meanwhile, mix the mayo, onion, and yogurt in a bowl. Pressing out any excess water as you go, chop the spinach very fine and then mix into the yogurt. Season with salt and pepper.
