Salmon with Cilantro Sauce

Apologies at the outset for the craptastic photo here. Many nights, I’m finishing dinner prep, wrangling the kids to the table, and cleaning simultaneously. It’s not the best environment for getting a picture just so. Truly, I cannot even imagine how Deborah of Smitten Kitchen manages it. She must be superhuman.

Ok, hey CSAers, we got a LOT of cilantro last week, right? What to do with a giant bunch? Grind it up! Do that, and it serves 4.

  • 4 Salmon Filets
  • 1 bunch Cilantro
  • Juice of 1 lime
  • 1 tsp grated fresh ginger
  • 1 Tbs toasted sesame oil
  • smidge Asian chili-garlic sauce
  • salt

Heat grill. Prepare salmon with some oil, salt and pepper, and grill to desired doneness. Meanwhile, clean, then chop cilantro roughly. Add it to a food processor along with the next 5 ingredients, and grind it into a pesto. If needed, add a bit of water to thin the sauce out. Serve over salmon. Yum!
