Beet and Carrot Salad

Hi beets, I guess it must really be Spring!

I served this for neighbors to rave reviews. They took home the leftovers. Thank goodness, as I am certain that there will be more beets next week!

  • bunch red beets, roasted
  • bunch golden beets roasted
  • 5 large carrots
  • 2 oz feta
  • 2 tbs olive oil
  • 1 tbs dill
  • 1 tbs dijon
  • 1 tbs red wine vinegar
  • salt and pepper

Roast beets in tin foil at 400 degrees for about an hour (this can be done several days in advance, if needed). Remove skins and chop into bite-sized dice. Cut carrots into similar-sized pieces. Boil for 10 minutes or until slightly tender. Mix carrots and beets together.

Chop feta into small pieces and mix in with the veggies. In a small bowl, mix the next 5 ingredients. Pour over the salad, stir, and serve.
