What does it say about me that I still cannot stop thinking of my greens with sausage and cream pasta? It’s so bad that I am seriously thinking about repeating the recipe right away even though, gosh, I really ought to do some white beans and greens or something that could pass for healthy eats.
This week saw an influx of fruit that the kids will eat – oranges and strawberries – which always makes things easier. All in all, I think it will be a simple, if not super creative week.
- Spring onions
- Kale pockets with blue cheese and pine nuts
- Stuffed Poblanos (Stuffed with spinach and rice and topped with avocados)
- Some giant main-dish salad
- Roast broccoli
- beans and greens (if I’m doing it right)
