This week looks a lot like the last, which is good. I still have plenty of good ideas for what to do! Also, I stacked the odds in my favor by giving away a couple of my squash to a coworker, and half the basil to a neighbor. That should make it easier to get through it all in one week!
The Haul:
Beets
Onions
Potatoes
Eggplant
Squash
Tomatoes
Lemon
Grapefruit
Lettuce
Collards (I’m pretty sure)
Basil
Cilantro
The Plan:
Beet soup
Some sort of tomato/onion tart with Basil
Squash bread
Aji sauce
No clue what to do with the collards. I’m taking suggestions there!

So any of those three would probably do you proper, or anything in that general flavor profile. From this recipe, I then throw in anything else that seems tasty – I have some suggestions along with the recipe.
Wow, thank you! This looks delicious. When it comes to collards, it really is all about the bacon, right? If you don't use meat, you have to come up with some way to replace the smoky and fatty elements. Funny, I have that cookbook, and never thought to look at it for collards. Seems sort of silly now that I think about it.Thanks for the recommendation. I'll let you know what I come up with!
