Broccoli Pasta

It’s a noodle-intensive week.  My heritage is Italian, and dumping veggies on noodles is about the easiest way to get through the share for me.  I love this recipe because it is fast and the whole family will eat it without complaining.

8 oz pasta shapes
1 C sliced ham
2 medium heads broccoli, florets cut off
1 clove garlic, crushed
Juice of one lemon
1 C grated Parmesan

Boil water for pasta.  Add pasta.  When the pasta has only 4 minutes left to cook, add broccoli to the pasta.  In a large pot, pour a little EVOO, and cook garlic over medium heat for one minute.  Add ham and heat through.  Add lemon juice, and then turn off heat.  Add pasta and broccoli to the ham mix.  Top with Parmesan and stir until slightly melted.
