Orange Almond Salad

That’s right, I just have this one serving bowl…

OK, I have no clue why this tastes good, but it really does. I was having a friend over last night and doing a sort-of Asian-y thing with chicken and carrots and I needed another side. I figured that I could make the gazillion oranges I had work somehow, and this was the result. The hardest part of this recipe is prepping the oranges. I made enough for three servings. You can scale the recipe up for more. Figure one orange per adult.

3 oranges, peel removed and sliced into circles
1 tsp toasted sesame oil
small handful of sliced almonds
Stir all ingredients together, let sit for a few minutes, and enjoy!
